1.5 oz Espadín mezcal
.75oz Fresh lemon juice
.5oz pineapple-cinnamon syrup*
.25oz Suze apéritif
.25oz Yellow Chartreuse

HOW TO MAKE THIS DELICIOUS SMILING RABBIT COCKTAIL:


1. Add all the ingredients to a cocktail shaker with ice and shake until well-chilled.

2. Strain into a rocks glass over fresh ice, and garnish with a pineapple leaf.

Note: *Pineapple-cinnamon syrup: Bring 1 cup sugar and 1 cup water to a boil, and simmer until sugar is dissolved. Remove from heat, add 1 cup fresh pineapple chunks and 4 cinnamon sticks, and steep for 30 minutes. Remove solids, and store in the refrigerator.

Brazilian Passion Fruit Caipirinha

Ingredients (Serves 1):

3 limes, wedges

1 whole passion fruit (just the pulp)

4 ts of brown sugar

2oz of cachaça (brazilian distilled) or Vodka

A handful of ice

Instructions:

In a shaker add the limes, sugar and the cachaca or vodka and mix together with your muddle. Add the passion fruit pulp and shake it for at least 10 seconds. Pour into a glass and garnish with a lime wedge or mint leaves. Enjoy!

Cucumber Mint Gin Cooler

Ingredients to batch a serving of 3 cocktails:

6 ounces gin

1 cup cucumber cut into chunks, plus a few thinly sliced for garnish

12 mint leaves plus more for garnish

2 tablespoons sugar (or beet sugar)

¼ cup fresh lemon juice

Chilled Club soda to cap

Ice

Instructions:

In the jar of a blender, combine the cucumber chunks, the mint leaves, sugar and lemon juice. Puree until you have a smooth mixture.

Fill two glasses with ice. Add 2 ounces of gin to each glass and the thinly sliced cucumbers. Fill the glasses to 2/3rds full with the cucumber mixture. Top with club soda and stir well.

Apple Cider Moscow Mule

Ingredients: (1 serving)

2oz cup apple juice or cider

2oz cup ginger beer

1.5oz shot of vodka

.25oz teaspoon fresh lime juice

1/4 teaspoon fresh grated ginger

Pour all ingredients over ice into a mason jar and stir for 10 seconds, enjoy! =)

Spicy Honey and Grapefruit Margarita

Serves 1

Ingredients:

2 small slices of jalapeno

1 oz of Honey + cayenne simple syrup
(How to make: equal amounts of honey, water and cayenne stirred together on heat, let it cool down before mixing in)

3 oz of Grapefruit juice, fresh

1 oz Cointreau

1 oz Tequila

Add all ingredients to a shaker, if you would like, muddler the jalapenos first for extra spice. Shake it all and strain over into a rocks glass ice and garnish with a lime or jalapeno slice.

Optional - Margarita salt & cayenne mix rim.
Add a tiny pinch of cayenne into the cocktail when finished.

Passion Fruit Mojito

Ingredients: (1 serving)

1 Lime wedge

6 Mint leaves

2 oz Rum or light rum

1 oz Fresh Passion fruit juice

1 oz Lime juice

1oz simple syrup

BLACKBERRY BOURBON SMASH

Ingredients: (Serves 1)

2 ounces bourbon

1/2 ounce lime juice, or 2 lime wedges, squeezed

6–7 mint leaves, muddled

2–3 blackberries, muddled

3/4 ounce simple syrup (1 tablespoon of sugar will do)

1 ounce club soda

ice

Instructions:

combine all ingredients into a cocktail shaker except for the soda water, ice & bourbon. Muddle until everything is “Smashed” Add bourbon, ice and shake vigorously for 15 seconds.

Empty all ingredients into a rocks glass without straining and add a .5oz soda topper. Stir and garnish with a fresh mint sprig and add blackberry on a pick.

3/4 cup Fennel, bulb - juiced

1 4 teaspoon pinch Orange, zest

3/4 cup Rhubarb - juiced

1 Rhubarb ribbon and fennel frond

1/2 oz Lemon juice

1/2 oz Rhubarb fennel syrup

1 pinch Salt

1/2 cup Sugar

1/2 oz Gin

1 1/2 oz Vermouth
